INTRODUCTION
Chilling of milk means rapid cooling of raw milk to a sufficiently low temperature so that the growth of micro-organisms present in milk is retarded. In the chilling process, the temperature of the milk should be reduced to 4° Celsius.
PURPOSE OF CHILLING
At the farm, if the farmer has no provision to cool the milk after obtaining from the udder of the milch cattle, it should be delivered to the nearest milk chilling center with (in 2-3hours), where the milk is chilled immediately to 4o centigrade and stored in a milk storage tank which is insulated.
PROCESS OF CHILLING UNIT
In the refrigeration system (IB) chilled water is prepared at 0.5o-1o centigrade, and is pumped through a tubular pre-cooling or heat plate exchanger, in counter-current with the milk from the raw milk tank to reduce the temperature of the milk from 35o-4o centigrade.
Advantages of ice water milk cooling system in comparison with a traditional system:
1. Milk gets chilled through the raw milk chiller instantaneously.
2. There is a provision to Re-chill the milk whenever the milk temperature in the milk storage tank is increased over and above 6-8 centigrade.
3. IBT has the provision of ICE thick controller and chilled water agitator to dissolve Ice.
4. An environmentally friendly milk storage tank is insulation with PUF.
5. Higher cooling performance with an automatic expansion of refrigerant in the IBT.
6. Milk is immediately cooled below the critical limit of 10° with ice water, stopping immediately the bacterial growth.
7. Mixing low temperature during on-goings milking reduces drastically the possibility of bacterial growth
8. Milk can be collected anytime even during the milking phase when cooled immediately.
9. It is possible to cool small quantities of milk without any freezing risk.
10. It allows power management for cooling at different times compared to the milking phase.
11. The ice can be rebuilt through the use of smaller compressors. The electric request is therefore lower.
